Saturday night plans: puzzles, movies, and pasta If you’re wondering if creamy pasta sauces run through my veins the answer is yes This one is a creamy tomato sauce with avocado as the base- but you’d never know! Only requires a few simple ingredients that you may already have on hand! Recipe below •• ______________________________________ 1/2 large ripe avocado (or 1 small avocado) 3/4 cup crushed tomatoes (or a marinara sauce will work) 1/4 cup olive oil 1/4 cup nutritional yeast (gives a cheesy flavor and adds B vitamins and some protein) 1.5 tsp Italian seasonings Salt + pepper to taste 1. Blend all ingredients until smooth. Taste and continue to salt + pepper until desired taste. ** for a thinner sauce add more crushed tomatoes 2. Add to hot pasta or zucchini noodles to warm the sauce up. Store leftovers in an airtight container for up to 24 hours.

You can play with adding a little cocoa powder if you want) 1 cup almond flour 1/4 cup coconut flour 1 cup shredded zucchini (1/2 large zucchini) 1 egg 3 tbsp coconut sugar 2 tbsp avocado oil 1 tsp baking soda 1 tsp cinnamon 1 tsp vanilla 1/4 cup @enjoylifefoods chocolate chips 1. Preheat oven to 375F and combine all dry ingredients in a bowl. 2. In a separate bowl, whisk egg then mix with all other wet ingredients. 3. Combine all ingredients. 4. Spoon about 2 tbsp-sized drops into parchment-lined tray. Bake for 12-15 minutes.
